YUMMY!
My inspired version: I don't know about you,
but I've seen this salad recipe everywhere. Rumor has it 'no one can get
enough of the original version'. Not that it's not tasty. I mean who
can say they know better than a White House chef how to make an amazing
salad? It's like telling Wolfgang Puck, "Who needs your pizza, I got
this". Still me being me, I thought I could yummify it. So my daughter
and I did a little experimenting and came up with our 'Not' Biggest
Loser-White House Salad. It's pretty spectacular if I do say so myself. The
best part is you can toss in any fresh veggies that you have on hand and it's always fabulous. This is by far our FAV salad recipe!
SALAD
Romaine Lettuce - washed and torn into bite-sized pieces
Spinach - washed and torn into bite-sized pieces
1 Cucumber - cut into bite sized pieces
Handful Cherry and/or Sunburst Tomotoes - cut each in half
1/2 Red Onion - diced as small as possible
1/2 Red Onion - diced as small as possible
2 or 3 Green Onions - finely diced
1/2 Red or Yellow Bell Pepper - finely diced
1 Cup Cooked Chicken* - shredded or diced
Pine Nuts or Sunflower Seeds** - small handful

*save time - use rotisserie chicken from the grocery store :)

DRESSING
3-4 Tbsp Fresh Lemon Juice
1/4 Cup EVOO
1 Tbsp Flax Seed Oil
1-2 Tbsp Organic Honey
1-2 Tbsp Organic Honey
1-2 Tbsp Rice Wine Vinegar
Sea Salt and Fresh Ground Pepper to taste
PREPARE
Toss
lettuce and veggies in a large mixing bowl. Top with chicken and nuts. Next
combine dressing ingredients in a sealable container, cover and shake
vigorously. Now place a nice large scoop of salad in a bowl. Add
dressing to taste. Enjoy!
